Paleo Muffins.

I love a great breakfast food, especially one that’s fast, easy, and delicious. This recipe fits all that criteria! I am listing simply how I made it, but the original recipe comes from this website and offers a few other suggestions. Bake away!


1 c almond butter

2 ripe bananas

2 tbsp honey

2 eggs

1 tsp vanilla

1/2 tsp baking soda

1 tsp apple cider vinegar


Throw all the ingredients in a blender and blend until smooth. Scoop into well-greased muffin tins and bake at 400 degrees for 8-10 minutes or until muffin tops are set. Remove pan from oven and cool slightly on a wire rack before enjoying muffins (tops may deflate slightly). Store in an airtight container in the refrigerator. Makes 12 regular-sized muffins.
