Greek Spinach Rice.

My sister sent me this recipe. The email subject line was, “My house smells so good I might eat it.” I suppose if that isn’t an endorsement of this recipe, I don’t know what is. Rice, spinach, and garlic? Don’t mind if I do!

 

1/3 c olive oil

1 c uncooked white rice

1 large red onion, diced

2 cloves garlic, minced

2 c boiling water

1 package frozen spinach (14-16 oz)

1 8-oz can tomato sauce

1 tsp dried parsley

1 tsp dried dill

Sea salt & pepper

1 lemon, halved

 

In a large skillet with a fitted lid, heat oil over medium-high heat. Add rice, onion, and garlic. Saute until onion is tender and rice is lightly golden. Stir in boiling water; cover, reduce heat, and simmer for 10 minutes. Add spinach, tomato sauce, parsley, dill, and salt & pepper to taste. Stir until combined, cover, and simmer an additional 5-15 minutes until rice is cooked through. Squeeze fresh lemon juice over each serving.
