This is the perfect way to add flavor to bean & rice burritos, which is how we ate this dish. Some of my chili recipes recommend adding a spoonful of rice; I bet this addition would rock!
3 c cooked brown rice (hot)
2 limes, quartered
Bunch of cilantro, chopped
Juice lime quarters directly onto rice, allowing some of the lime flesh to drop into the rice. Add cilantro and a pinch of salt; stir until combined. Serve with chili, beans, or as a simple side dish.
