Bert’s Best Blueberry Oatmeal Bars.

That would be Ernie’s good ol’ buddy ol’ Bert from SESAME STREET. I’m telling you, Sesame Street is the gift that keeps on giving! This recipe comes from my sister-in-law, who got it from a friend, who got it from a Sesame Street book called C Is for Cooking by Susan McQuillan, RD. I had the chance to flip through the book & love the ninja-style of nutrition the recipes offer for picky kids. Check it out (after you try this recipe, of course)!

 

1 1/2 c flour

1 tsp ground cinnamon

1 tsp baking soda

1/2 tsp salt

1 c light brown sugar

1/2 c granulated sugar

1/2 c (1 stick) butter, softened

1/2 c vegetable oil

2 eggs

1 tsp vanilla

3 c uncooked old-fashioned oats

1 pint (2 c) fresh blueberries

 

Preheat oven to 350. Line a 9×13″ pan with aluminum foil. Lightly grease foil with cooking spray or vegetable oil. In a small bowl, whisk together flour, cinnamon, baking soda, and salt until well-mixed. In a large bowl with an electric mixer at medium speed, beat together brown sugar, granulated sugar, and butter. Beat in oil, eggs, and vanilla. With a wooden spoon or spatula, mix in the flour mixture until well-blended. Stir in the oats and blueberries. Spread batter evenly in pan. Bake until golden brown ~ 30-35 minutes. Insert a knife/toothpick & it should come out clean. Allow to cool completely. Lift by the foil from the pan and cut into bars.
