Hearty Chocolate Chip Banana Bread.

This sits like a happy rock in my stomach after I eat it. The texture and flavor is hearty and worth every.single.calorie. I like to mash the ingredients together in a fairly unorthodox way to make the butter bubble during baking and to keep each bite a little different.


1 c whole wheat flour

1 c ground oats

1 tsp baking soda

1/2 tsp salt

1/2 c butter, cubed

3/4 c unpacked brown sugar

2 large ripe bananas

2 eggs, beaten

1/2 c walnuts, roughly chopped

1 c chocolate chips


In a large bowl, mix flour, oats, soda, and salt together. Add butter, sugar, bananas, and eggs, and mash together with a wooden spoon. Stir in walnuts and chocolate chips. Pour batter into a buttered loaf pan and bake at 325 degrees for 35 minutes or until toothpick inserted in center comes out clean. Allow to cool 15 minutes in pan and remove from baking dish. Slice and serve warm at breakfast, lunch, or after dinner.

  1. I made this last night sans walnuts and chocolate chips, and it delicious. Because I’m impatient (and because I had it out for the creamy tomato soup recipe), I used a blender both to grind the oats and to combine the eggs, butter and bananas. it was a little more liquid than it should have been, but it saved a lot of time.
