Apple Cinnamon Whole Wheat Muffins.

Hearty, wholesome, delish. I love how the oven warms up the house first thing in the morning.


2 c whole wheat flour

1/4 c sugar

1 tbsp baking powder

1/2 tsp salt

2 tbsp wheat germ

1 egg, beaten

1 c milk

1/4 c oil

2 tsp cinnamon

1/4 c chopped apple (I used Jonathan & left the skins on)


Sift together flour, sugar, salt, wheat germ, and baking powder. Beat milk and oil with egg; add egg mixture to flour mixture. Stir until just combined. Sprinkle apples and cinnamon on top of mixed batter and gently swirl; don’t over-mix. Using a 1/4-cup measuring cup, scoop out batter into a greased muffin tin and bake at 375 degrees for 12 minutes or until lightly browned on top. Makes 13 (lucky!) muffins.
