Green Pancakes.

I had to stop myself from typing “Gween Paincakesth,” which is how my two-year-old son pronounces it. These are one of the ways I “get one over” him. They turn out a little gooey even when fully cooked, but their nutrition is through the roof.

 

2 bananas

2 eggs

1 c milk

1 c flour

1/2 c oatmeal

2 tbsp ground flax or wheat germ

1 c frozen spinach (from a bag) or 2 c fresh spinach

2 tbsp sugar or 1 tbsp agave nectar

1/2 tsp salt

 

Load all ingredients in a blender and pulse about 10 times, then blend until smooth. Batter should be fairly runny. Fry pancakes in (what else?!) butter over medium-low heat, about 3 minutes on each side. Serve with a little bit of maple syrup.
