Chili Lime Sweet Potato Wedges.

I got inspiration for this recipe from a recent edition of Cosmopolitan, of all places. While I wouldn’t call the product a “fry,” it definitely fills the niche a fry would fill. This recipe has great flavor without a lot of ingredients.

 

8 sweet potatoes, scrubbed (not peeled) and sliced into wedges

Juice of 3 limes

1/4 c olive oil

3 tbsp chili powder

1 tbsp sea salt

 

In a small bowl, combine chili powder and sea salt; set aside. In a large bowl, combine sweet potatoes, lime juice, and olive oil. Sprinkle seasoning on top and toss to coat evenly. If you have time, allow potatoes to marinate in seasoning for an hour at room temperature. Bake for 30 minutes at 400 degrees or until wedges are soft and edges are dark.
