This recipe is inspired by one I found on the website RealSimple.com. It. Is AWESOME. We ate it with grilled salmon and wilted spinach salad.
4 corn cobs, shucked
1/4 c soft white cheese (like feta)
1/8-1/4 c olive oil
Sea salt & fresh cracked pepper
Coat a dinner plate with olive oil; season graciously with salt & pepper. Roll freshly shucked corn in seasoned olive oil and place directly on a hot grill. Grill all sides of corn until several pieces are charred on each side; remove from heat. Squeeze lime juice onto each corn cob and sprinkle with a pinch of cayenne pepper. Serve with a fresh lime wedge and a spoonful of feta.
