Vegetarian Gravy.

My cousin Kimmi has been a vegetarian for longer than I have. Since striking out on her own a few years back, she has become quite the cook. We spent a weekend together recently and she told me about some of her favorite ways of coping as a vegetarian in a carnivorous world. Here’s one of her breakfast conundrums solved: something to eat on top of biscuits!

2 tbsp butter

1/4 c onion, chopped

2 garlic cloves, crushed

1/2 c flour, plus more for texture

1 c milk (have more handy)

1 cube vegetable bouillon

1/2 c grated cheese (asiago, Parmesan, cheddar, etc.)

Dash of your favorite seasonings (Mrs. Dash, Italian seasonings, crushed red pepper)

In a small saucepan, melt butter and add onion; saute until onions are starting to turn translucent. Add garlic and toss until fragrant. Sprinkle flour on top of onion mixture and cook over medium heat until flour is absorbed and slightly browned. Stir in milk and bouillon and continue to stir until mixture thickens (may need to sprinkle in more flour). Season with spices of choice, if desired. Serve hot over warm biscuits.
