Greek-ish Cucumber Salad.

This is perfect for hot summer evenings!

1 large cucumber, quartered and cut into thick wedges

8 oz grape tomatoes, halved

1/4 c red or green onion, diced

1/4 c crumbled feta or shredded Parmesan cheese

4 tbsp olive oil

1/2 tsp dried dill weed

1/2 tsp sea salt

1/8 tsp ground pepper

Additional (optional) mix-ins:

1 tbsp balsamic vinegar

2 oz kalamata olives

Toss cucumber, tomatoes, onion, and cheese (and olives, if using) in a large bowl. In a separate bowl, whisk together oil and spices (and vinegar, if using); pour over salad. Toss to coat and allow to sit at room temperature for 10 minutes. Serve over pasta, mixed greens, or in a pita pocket.
