When I made this for my son’s first birthday party, it was the hit of the party (besides my kid, of course). Pork butt isn’t the healthiest thing on the planet, but using a fatty cut of meat for this recipe is essential for effortless flavor. The acid from the lemon juice or coffee make the pork nice and tender and brings out the sweet-spicy flavors of the seasonings. This is another one of those gloriously cheap meals if you happen to buy the pork around Memorial Day and Labor Day!
3 lbs pork butt
18 oz of your favorite BBQ sauce (I used Sweet Baby Ray’s), or you can make your own
1 red bell pepper, diced
1 large white or yellow onion, diced
3/4 c brewed coffee or 1/4 c lemon juice
1/2 c brown sugar
2 tbsp cumin
Sea salt and pepper to taste
Cook meat in crock pot until it shreds easily with a fork, about 3 hours on high or 7 hours on low. Drain meat and shred; return to crock pot. In a separate bowl, combine remaining ingredients and pour over the pork. Toss to coat evenly and cook on high for an hour. Serve on kaiser rolls or over cole slaw. Serves about 10 million people.
