Happy Pancakes.

My kid asks for “paincakes” nearly every morning. I try and load them with healthy grains and extra eggs so they can be a healthy everyday treat.

1 c whole grain flour

1/2 c wheat bran, wheat farina (Malt-O-Meal), oats, or some other fiber-rich grain

2 tsp baking powder

1/2 tsp salt

2 tbsp sugar or 1-2 tbsp agave nectar

2 eggs

1/2 c plain or Greek yogurt

1 c milk

1 tsp vanilla

In a medium bowl, sift together flour, grains, baking powder, salt and sugar. In a separate small bowl, whisk together eggs, milk, yogurt and vanilla. Add wet mixture to dry and mix until just combined. Batter will be slightly lumpy. Melt a pat of butter in a large frying pan over medium-low heat. Drop batter into buttered pan in 1/4 c increments for small pancakes or 1/2 c increments for larger pancakes. Flip pancakes when bubbles on top are starting to pop. Serve with fresh fruit on top. Makes 4 servings.
