Apple Scones.

3 1/2 c flour, plus more for dusting

5 tsp baking powder

1/2 tsp salt

1/2 tsp cinnamon

1/2 c sugar

3/4 c cold butter

1 egg, beaten

1 c milk

1/2 apple, cut into small slices

Large-granule sugar

In a large bowl, sift together flour, baking powder, salt, cinnamon, and sugar. Cut butter into small pats (about 1/2 tbsp each) and drop into flour mixture. Using hands, work butter into flour mixture until it resembles coarse crumbs. In a small bowl, beat egg. Add milk and whisk to blend. Form a well in the center of the flour/butter mixture and slowly pour milk in center. Using fingers, work the ingredients together until batter is elastic and less sticky; add more flour if necessary. Add apples and knead together until incorporated. On a lightly floured surface, knead dough for 1-2 minutes. Pat out until 1/2″ thick. Cut into 12 wedges, cover with sugar granules and bake at 400 degrees for 10-12 minutes. Serve warm with coffee or tea. Makes 12.
